Harvested in overripeness, to the character of the grape variety is added the power due to the phenomenon, favored by the noble rot. The fungus Botrytis Cinerea makes the berries permeable. This allows in sunny weather an evaporation of the water as well as a concentration and deployment of aromas.
The late harvest is an approval it is only after two years of elaboration and maturation in the cellar that it can claim approval.
